  • 23 salmon fillets skin on (about 1 lb.)
  • 1 tbsp. olive oil
  • 3 tbsp. butter divided
  • 3 garlic cloves minced
  • 2 tbsp. chopped parsley
  • 2 tbsp. lemon juice
  • 1 tbsp. Cajun seasoning or to taste
  • Salt & pepper to taste

Instructions

Step 1: Season the salmon

Pat your salmon fillets dry with a paper towel—it helps the seasoning stick better. Generously sprinkle salt, pepper, and Cajun seasoning on both sides of the fillets. Don’t skimp on the Cajun seasoning here—it’s the star of the show!

Step 2: Sear the salmon

Heat your olive oil in a medium non-stick skillet over medium heat. Once it’s shimmering (not smoking), place the salmon fillets flesh-side down. Let them cook undisturbed for about 5 minutes—you’ll know they’re ready to flip when they release easily from the pan. Flip them over gently and cook for another 5 minutes or until done to your liking. Set the salmon aside on a plate while you make the sauce.

Tip: If you’re not sure if the salmon is cooked, look for opaque flesh that flakes easily with a fork.

Step 3: Make the sauce

In the same skillet, add 1 tablespoon of butter and the minced garlic. Cook for about a minute, just until the garlic is fragrant (don’t let it burn!). Stir in the remaining butter, parsley, lemon juice, and an extra pinch of Cajun seasoning for good measure. Let the sauce simmer gently for a minute or two.

Step 4: Bring it all together

Return the salmon to the skillet and spoon the sauce over the fillets. Let them cook for another 2-3 minutes, allowing the flavors to meld. Your kitchen should smell amazing at this point!

Notes

To serve, place each salmon fillet on a plate and spoon the buttery sauce generously over the top. Garnish with a sprinkle of fresh parsley for color.
