- Cake:
- 1½ cups packed brown sugar
- ⅓ cup oil
- 1 large egg
- 1 cup regular or low-fat milk
- 1 teaspoon vanilla extract
- 2½ cups all-purpose flour, measured correctly
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 2 cups peeled, cored, and chopped baking apples
- Topping:
- ½ cup granulated sugar
- 1 teaspoon cinnamon
- 1 tablespoon melted butter
Instructions
- Prep your pan and oven
Preheat your oven to 325°F (165°C) and grease a 9×13-inch baking pan. I like to use a bit of oil or butter and a dusting of flour to make sure nothing sticks. - Mix the wet ingredients
In a large bowl, combine the brown sugar, oil, egg, milk, and vanilla. Whisk until smooth and creamy. You’ll notice the mixture looks glossy, and the brown sugar will dissolve slightly. - Add the dry ingredients
Sprinkle in the flour, baking soda, and salt. Stir gently—overmixing can make the cake tough. Stop stirring as soon as the flour disappears. The batter will be quite thick, but that’s what makes this cake so hearty and satisfying! - Fold in the apples
Toss in your chopped apples and fold them into the batter with a spatula. Make sure the apple pieces are evenly distributed, so every bite has that juicy apple goodness. - Pour and smooth the batter
Pour the batter into your prepared pan and smooth the top with a spatula. The batter will be thick, so take your time spreading it out. - Add the cinnamon-sugar topping
In a small bowl, mix together the granulated sugar, cinnamon, and melted butter. Sprinkle this mixture evenly over the top of the batter. This topping will create a lovely, crunchy crust as it bakes. - Bake to perfection
Pop the pan in the oven and bake for 40-50 minutes. Around the 40-minute mark, test the cake with a toothpick. If it comes out clean or with just a few crumbs, the cake is done. Let it cool in the pan for at least 15 minutes before slicing.
Notes
This recipe is pretty flexible! For a smaller group, you can halve the recipe and bake it in an 8×8-inch pan, adjusting the baking time to around 30-35 minutes. For a crowd, try doubling the recipe and baking it in a larger pan (just keep an eye on the baking time).
