Instructions
Preheat the Oven: Start by preheating your oven to 400°F (200°C). Grease a muffin tin generously with cooking spray or oil. A silicone muffin pan works well to ensure the muffins are easily removed.
Cook the Sausage: In a skillet over medium heat, brown the breakfast sausage until fully cooked. Break the sausage into small crumbles as it cooks. Drain any excess grease, leaving just a small amount in the skillet to cook the eggs.
Scramble the Eggs: In the same skillet, scramble the beaten eggs over medium heat. Break the eggs into small, bite-sized pieces as they cook. Set the cooked eggs aside.
Prepare the Batter: In a mixing bowl, combine the pancake mix, water, maple syrup, salt, and pepper. Stir until the mixture is smooth and well combined.
Add the Fillings: Gently fold the cooked sausage, scrambled eggs, and shredded cheddar cheese into the pancake batter.
Fill the Muffin Tin: Pour the batter into the prepared muffin tin, filling each cup about 3/4 full. A scant 1/4 cup of batter per muffin is usually perfect.
