To make these delightful muffins, you’ll need the following ingredients:

  • 2 1/4 cups complete pancake mix (just add water)
  • 1 1/3 cups water
  • 1 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • 4 eggs, beaten
  • 1/2 cup maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

  • Complete Pancake Mix: Choose any brand of complete pancake mix that only requires water. This simplifies the preparation and ensures a consistent texture.
  • Breakfast Sausage: You can use your preferred type of breakfast sausage, such as turkey or chicken sausage.
  • Cheese: Shredded cheddar adds a nice sharpness, but you can substitute with other cheeses like mozzarella or pepper jack for different flavors.
  • Maple Syrup: Use real maple syrup for a rich, authentic taste that perfectly balances the savory elements.

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Grease a muffin tin generously with cooking spray or oil. A silicone muffin pan works well to ensure the muffins are easily removed.

Cook the Sausage: In a skillet over medium heat, brown the breakfast sausage until fully cooked. Break the sausage into small crumbles as it cooks. Drain any excess grease, leaving just a small amount in the skillet to cook the eggs.

Scramble the Eggs: In the same skillet, scramble the beaten eggs over medium heat. Break the eggs into small, bite-sized pieces as they cook. Set the cooked eggs aside.

Prepare the Batter: In a mixing bowl, combine the pancake mix, water, maple syrup, salt, and pepper. Stir until the mixture is smooth and well combined.

Add the Fillings: Gently fold the cooked sausage, scrambled eggs, and shredded cheddar cheese into the pancake batter.

Fill the Muffin Tin: Pour the batter into the prepared muffin tin, filling each cup about 3/4 full. A scant 1/4 cup of batter per muffin is usually perfect.

Bake the Muffins: Place the muffin tin in the preheated oven and bake for 16-18 minutes, or until the tops of the muffins are nicely domed and golden brown. To check for doneness, insert a toothpick into the center of a muffin; if it comes out clean, they’re ready!

Cool and Serve: Allow the muffins to cool in the tin for at least 5-6 minutes before removing them. Serve warm with extra maple syrup for dipping.
