  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts
  • ½ teaspoon sea salt
  • ¼ cup strawberry jam
  • 1 tablespoon good quality balsamic vinegar
  • 1 tablespoon water extra if mixture is too thick
  • ¼ cup fresh basil leaves, cut into ribbons or finely chopped
  • 2 tablespoons crumbled goat cheese optional
  • ¼ cup fresh strawberries sliced (optional)

Instructions

1. Sear the chicken for a golden crust

Heat olive oil in a skillet over medium-high heat. While it warms up, season the chicken breasts with salt. Once the oil shimmers, add the chicken to the pan. Let it cook undisturbed for about 4-5 minutes. This helps develop a beautiful golden crust.

Tip: If the chicken sticks when you try to flip it, give it another minute—it’s not ready yet!

2. Flip and finish cooking

Turn the chicken over and cook for another 4-5 minutes, or until fully cooked through. If you’re unsure, cut into the thickest part; the juices should run clear.

Mistake I’ve made: Cooking on too high of a heat can burn the outside before the inside is done. Keep it at a medium-high level for even cooking.

3. Make the sauce

While the chicken cooks, whisk together the strawberry jam, balsamic vinegar, and water in a small bowl. Once the chicken is nearly done, pour this mixture over the pan, scraping up the flavorful browned bits.

4. Simmer and let the flavors blend

Reduce the heat and let the sauce bubble for about 2-3 minutes. It should thicken slightly. Stir in most of the basil and let it simmer for another minute.

5. Plate and garnish

Remove the chicken, drizzle the sauce over the top, and sprinkle with goat cheese, fresh strawberries, and the remaining basil.
